Jamie Oliver: 3 minute pasta sauce recipe

The ingredients:

  • 1 red chili
  • 2 cloves garlic
  • 1 tablespoon olive oil
  • 5 sprigs of basil
  • 1 jar whole peeled tomatoes (400 g)
  • 250 g fresh sheets of lasagne (from the refrigeration department) or other types of fresh pasta
  • 80 g frozen peas or other green vegetables
  • 1 small piece of parmesan


  1. Boil a saucepan of salted water. Preheat a pan.
  2. Halve the chili, remove the seeds (they are responsible for the heat) and chop finely. Finely chop the garlic cloves as well.
  3. Add the olive oil to the pan together with the chili and garlic and fry, stirring often.
  4. Wash the basil, shake dry and remove the leaves from the stems. Finely chop the stems and place them in the pan.
  5. Mash the whole peeled tomatoes with your hands over the pan and add them to the pan together with the tomato juice. Fill the empty jar with a splash of warm water, spin briefly and place in the hot pan as well.
  6. Cut the lasagne plates with a knife into narrow strips – à la tagliatelle or pappardelle – and cook in boiling water for a few minutes. It is worth taking a look at the preparation recommendations on the package.
  7. Add the frozen peas to the tomato sauce and bring to the boil.
  8. Add the cooked lasagna noodles to the tomato sauce while they are dripping wet and stir well. The sticky pasta water is rich in starch and makes the sauce creamier. Let everything simmer for 30 seconds. Season with salt and pepper.
  9. Serve the quick 3-minute tomato sauce with the pasta and freshly grated parmesan.
