1. Granola

granola It’s good and really healthy too! Not for nothing is it the breakfast favorite for people who like the sweet in the morning. Would you rather eat granola with yoghurt? But this is also vegan. We reveal how!

Preparation: Crunchy oatmeal and walnuts – walnuts, hazelnuts or almonds taste extra good – mix with a teaspoon of cinnamon and a lot of agave syrup. A fine mass must have formed at the end. Spread them on a baking sheet and put them in the oven at 180 degrees for about 15 minutes. The agave syrup ensures that the oatmeal and nuts are really crispy. Stir occasionally so that the granola gets color on all sides.

As a yoghurt substitute: Mix 1 banana and a handful of frozen raspberries or other berries with 1/2 cup of oat milk in a blender until smooth. Put the finished granola on top, refine with optional toppings and voilà, you have a delicious and wholesome breakfast in front of you that does not contain any animal products.

Vegan smoked salmon

Vegan smoked salmon is the trend par excellence and is currently offered at all hip cafes in the big city. If you want to do it yourself at home, you need two things in particular: carrots and smoke aroma! Well done, it tastes deceptively authentic. In addition, carrots are full of vitamins and minerals and are therefore good for your health. The best? With a little twist, the recipe is for you too if you do not like fish.

Preparation: It is best to use large carrots and cut them into long thin strips with a vegetable peeler. Now cook the carrots for a few minutes until they have softened. Then add the carrot strips liquid smoke (1 teaspoon for 3 carrots), a little soy sauce, lemon juice, a dash of maple syrup and nori leaves. Simply omit it later if you do not want it to be so “fishy”. Then leave the smoked salmon in an airtight container in the fridge for at least one night.

As a base: The vegan salmon tastes best in a bagel with cream cheese. Here, too, it is very easy to find plant-based alternatives based on soy or oats. The supply in the supermarkets is constantly growing. If you want to get creative yourself, you can conjure up a delicious dip from a piece of natural tofu, a clove of garlic and optional fresh herbs. Put everything in a blender and season with salt and pepper. Put the salmon on top and garnish with dill.

Vegan scrambled eggs

Do you love delicious scrambled eggs in the morning? Then try it as an alternative with vegan variant. In this case, natural tofu is used as an egg substitute, which is ideal if you go on a protein-rich diet and want to manage without animal proteins. So the perfect solution to replace the scrambled eggs on the breakfast table.

Preparation: The secret ingredients are Turmeric – for the yellow color – and Kala Namak. The black salt gives the dish a slightly sulfur-like aroma that is familiar from eggs. Simply crumble the tofu and mix with a little yeast flakes, pepper and paprika powder as needed. Then down in the pan. If you prefer it a little “sloppy”, you can add soy yogurt.

For below below: Wholemeal bread and avocado are suitable here as a base. If you want, you can toast the slice of bread on both sides with a little olive oil in the used pan. Cut up half an avocado and season with salt and pepper. On top of that comes the vegan scrambled eggs. Spring onions on top round it all off perfectly.

Preparation: In addition to the rice cakes, you need tomato puree, paprika powder, salt and pepper and of course a lot of onions! Crumble the rice cakes and mix with water until they have a “metal-like” consistency. Then season well, add the tomato puree and finally turn down the finely chopped onion. It is best to leave this mixture in the fridge overnight so that the rice cakes can absorb the aroma of the onion and spices as well as possible.

As a base: If you like it very classic, eat Mett on a veteran roll with vegan margarine. Finally garnish with onions and chives and enjoy.

5. Vegan tomato mozzarella

This Mediterranean classic is a part of every good brunch. But is it also vegan? In fact, yes! To make the herbal cheese substitute, you only need 5 ingredients – namely 2 tablespoons psyllium husk, 100 g cashews, 4 tablespoons yeast flakes and the juice of half a lemon.

Preparation: Soak flea seeds and cashew nuts in different containers for at least 2 hours. After that, process all the ingredients in a blender to a cheesy mass and season with pepper and salt. Pour into a mozzarella-shaped bowl and refrigerate overnight.
