Cauliflower and meatball soup recipe: This is what you need

The base of the soup is cauliflower, which is cooked with nut broth. There are also carrots and spring onions – and small meatballs that add a little spice to the stew. In the end, everything is boiled down with cream … and the ingenious soup for dinner is ready. Here is the delicious recipe that you should definitely try.

You will need: 1 cauliflower, 3 carrots, 1 bunch of spring onions, 1 onion, 2 cloves of garlic, 500 grams of ground beef, 3 liters of beef stock, 400 milliliters of cream, salt and pepper, paprika powder and fresh chives, 1 tablespoon of mustard

And this is how it works: wash the cauliflower and divide it into small bouquets. Peel the carrots and cut into fine slices. Cut the spring onion into rings and wash well so that no sand remains. Then put the vegetables in a saucepan and add two liters of beef broth. Bring to the boil and simmer on low heat for about 15 minutes.

Add the rest of the nut broth to another small saucepan. Put minced meat in a bowl. Peel and finely chop the onion and garlic cloves and add to the meat. Add a tablespoon of mustard and knead to a smooth mince. Then shape small meatballs out of it. Add one at a time to the boiling broth and simmer. Remove with a slotted spoon.

When the vegetables are cooked, add the cream and season with salt, pepper and paprika powder until crispy. If you want, you can thicken the soup with a little cornstarch dissolved in water to make it thicker. Finally, add the finished meatballs to the soup. Wash the chives and cut into rolls, add and stir. Have a nice meal!
