Do you already know Vareniki? The stuffed dumplings are the country’s national dish – and this is how you make them

It has been a week since Russian President Putin began the invasion of Ukraine – and thus started a war that is simply astonishing. Many people are now fleeing, arriving in Germany, seeking security from bombs and rockets, but also for security in German households, which give them asylum. And what gives more security than a delicious meal? Here’s a recipe for Vareniki, the Ukrainian national dish!

Recipe from Ukraine: Make Wareniki yourself – that’s what you need for it

Dumplings made of dough and filled with different types of filling hide behind this name. There are many varieties of “Wareniki”, many hearty, but also sweet, which are eaten as dessert. Although the dish is widespread throughout the territory of the former Soviet Union, it is traditionally associated with cuisine in Ukraine and is considered the national dish of the country. Here is a delicious basic recipe.

You will need: 400 grams of flour, 1 pinch of salt, 1 egg, 120 milliliters of water, a little oil, 800 grams of potatoes, 100 grams of herb quark, 3 onions, a little dill, 100 grams of bacon, salt and pepper.

Here’s how it works: First prepare the filling. To do this, peel the potatoes and boil them in salted water. Peel and chop two of the onions very finely. Heat some butter in a frying pan and fry the chopped onion until golden brown. Let the potatoes drain and mash it with a mash. Add quark, onion, salt, fresh pepper and dill and mix well.

Then the dough is prepared. To do this, mix flour, salt, eggs, water and about a tablespoon of oil into a smooth dough in a large mixing bowl and let rest for 30 minutes. Then flour the work surface and roll out the dough thinly. Cut out circles with a large glass. Place a tablespoon of the potato mixture in the center of each circle, fold the dumplings in half and press the edges together.

Then pour water into a large pot and, when the water boils, carefully lay down the dumplings with a slotted spoon. Always stir in between. The dumplings are ready when they float to the top. Remove and allow to drain a little. Melt some butter in a large pan. Finely chop the remaining onion and fry together with the bacon cubes. Pour in dumplings and serve. Have a nice meal!
