Ingredients:

For the filling:

  • 400 g fresh rhubarb, cut into small pieces
  • 400 g frozen strawberries (or 400 g rhubarb)
  • 75 g (6 tbsp) light brown sugar
  • 1 tablespoon orange juice
  • 2 teaspoons vanilla extract

For the oatmeal:

  • 300 grams of oatmeal
  • 25 g soft butter or coconut oil
  • 1 tablespoon light brown sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt

Ingredients for oatmeal crumbs with rhubarb and strawberries

Preheat the oven to 200 degrees. Put the rhubarb pieces and strawberries in a small oven dish. Add sugar, vanilla and orange juice and stir. Put in the oven and bake for 20-30 minutes, or until the fruit is soft but not too mushy.

Meanwhile, prepare the crumble top. Put oatmeal, sugar, cinnamon and salt in a bowl and add the butter / coconut oil. Rub with your fingers until small lumps form.
