- 500 grams of asparagus
- 150 g young spinach (baby spinach)
- 1 bunch of radishes
- 2 tablespoons natural yogurt
- 1 tablespoon white wine vinegar
- 1 tablespoon soy sauce
- ¼ teaspoon cayenne pepper
- 1 splash of roasted sesame oil
- 1 lemon
Heat the fat in a saucepan or fryer to 180 ° C.
Now prepare the flour mixture. To do this, grind the spices in a small mortar and add the flour with the baking powder to the bowl. Add about 350 ml of beer while stirring constantly until the flour mixture is free of lumps and sticks to the finger.
Now clean the asparagus if you use white: peel and cut off the woody stems. Halve the asparagus and dip in the flour-beer mixture.
Then drop the asparagus in the hot fat and fry for about 4 minutes, let it drain on several kitchen towels and sprinkle with sea salt. Then serve the asparagus with a quart of lemon.
For the salad, place the spinach in a large bowl. Finely chop the radishes and place on top of the spinach. Now mix the dressing that you can also use as a dip. To do this, mix the yogurt with vinegar, soy sauce, sesame oil and cayenne pepper.
