Recipe for cheese dumplings made from diced bread and mountain cheese

The most important ingredients required for the Tyrolean Kaspress dumpling portion are 400 g dumpling bread (bread cubes), 400 ml milk and 400 g mountain cheese and prepared butter for frying.

They look like meatballs, but they are completely meat-free: food blogger Doreen Hassek fell in love with her first date with cheese dumplings. And this is how she prepares the Tyrolean specialty.

Berlin. Caspress dumpling – funny word, right? Maybe it’s because this delicacy comes from Austria. It was there that I ate them for the first time, fresh from the pan at a street festival. I was crazy in love.

But I’m such a happy guy! For my best friend, who lives in Bavaria, is married to an Austrian. When I visit them, they are at the top of my wish list – well, what? – Cheese dumplings, of course!

To the great annoyance of the male part of the family, who lack the protein because me and my girlfriend prefer to eat dumplings with a salad. Of course, you can also combine them wonderfully with meat dishes or eat them with a hot broth, but we like them best that way.

Ingredients for 4 people:

400 g dumpling bread (bread dice), 2 small onions, 1 bunch parsley, 50 g butter, 400 ml milk, 4 eggs, 1 teaspoon salt, 4 pinches pepper, 2 pinches nutmeg, 400 g mountain cheese, clarified butter for frying


Finely chop the parsley in advance and grate the mountain cheese roughly. Finely chop the onion and fry it in a saucepan with butter. Add the milk and heat.

2. Remove the pot from the heat and add the remaining ingredients. Mix everything well and then let it rest for 30 minutes.

3. Form about 16 flat dumplings of the mixture with wet hands. Press the mass together firmly and evenly to the surface. Fry in hot clarified butter until brown, turning often. Serve the Kaspress dumpling with your favorite salad, close your eyes and enjoy.
