If you want to make your own egg white and prefer the classic version without milk or cream, you just need these ingredients and you are ready.


  • 8 egg yolks
  • 300 g sugar (or granulated sugar)
  • 1 vanilla bean
  • 250 ml alcohol (white rum or vodka)


1. Step: Wash the eight eggs in warm water and then separate them thoroughly. Set the egg whites aside or freeze.

2. Step: Scrape the pulp from the vanilla bean and add the egg yolks together with 200 g of the sugar. Whisk it all with a hand mixer for about five minutes until the sugar has completely dissolved and a homogeneous mass has formed.

3. Step: Now heat the mass to 70 ° C in a water bath. Simply place the bowl on a small saucepan with a little water and heat while stirring. The bowl must not touch the water. Then slowly stir in the alcohol.

4. Step: Once the perfectly creamy consistency has been achieved, it’s time for bottling. You simply pour the finished homemade egg batter into a measuring cup. Then it can be easily filled into bottles via a funnel.

The bottles are sealed immediately so that the liqueur’s heat can still develop a vacuum effect.

Grandma’s egg white according to the old GDR tradition needs condensed milk to bring out the taste of times gone by. The eggnog recipe with cream is especially creamy and delicious.

Vegan nutmeg recipe – the herbal alternative

If you live vegan, you still do not have to do without your beloved eggnog. Even without eggs and animal milk, you can make eggnog yourself, which is almost as good as its original representative in terms of color and taste.

If the egg batter is to be vegan, you can simply use coconut milk instead of condensed milk. Of course, this liqueur works even without eggs.


  • 200 ml vegan cream or coconut milk
  • 500 g soy vanilla pudding
  • 150 ml rum
  • 1 packet vanilla sugar
  • 0.5 teaspoon turmeric

Since a vegan egg white is made without eggs, you can skip the heating and simply mix the ingredients with a hand mixer until the liqueur is perfectly creamy. A pinch of Kala Namak can provide an extra egg aroma. Turmeric gives the right color effect. The vegan eggnog stays well chilled for a few days.
