Do you also want to try as many good asparagus recipes as possible this year? So let’s start today. Our suggestion to start: a delicious stew with white asparagus.

When the tender stems nestle against leeks and ham, everyone is watered in their mouths. Add a little creamy egg cream and the asparagus stew is ready after only 45 minutes!

This stew is a real all-rounder. It is suitable as a low-carbohydrate dinner. But it can also come out of the oven as a Sunday meal for the whole family. Then it is best to serve potatoes with the creamy casserole. By the way, you can also put them directly in the pot mold.

What you need (for 4 servings)

1.5 kilos of white asparagus, salt, sugar, 1 small leek (leek), 200 grams of cooked ham, 1 tablespoon oil, pepper, 1 bunch of chives, 4 small eggs, 200 milliliters of whipped cream, grated nutmeg

This is how it works:

Wash the asparagus, peel them and cut off the woody ends. Then cut the asparagus spear in the middle.

Boil about 1.5 liters of well-salted water in a large saucepan. Add a pinch of sugar. Then the asparagus comes in. It should cook for about 7 minutes.

Cut the leek in half lengthwise and wash it thoroughly. Then cut it into fine rings.

Also cut the ham into small pieces.

Heat the oil in a pan and fry the leeks and lightly ham in it. Season with salt and pepper. Then remove everything from the pan and distribute it in a large greased baking dish.

Let the asparagus drain and place it on the leek and ham.

Wash the chives and shake them dry thoroughly. Then cut it into small rolls.

Mix eggs, chives and cream and season with salt and nutmeg. Then pour the vanilla over the asparagus.

Now the pot goes into the preheated oven (top / bottom heat: 175 degrees, circulating air: 150 degrees). Leave it there for 20 to 30 minutes until the surface is nice golden brown.

Then take out and serve immediately.
