Ingredients for the cauliflower meatballs

You need: 600 grams of cauliflower bouquets, 1 egg, 50 grams of feta cheese, 100 grams of lean quark, 45 grams of tender oatmeal, 80 grams of wholemeal bread, a pinch of nutmeg, salt and pepper, thyme, oil

This is how the delicious cauliflower meatballs are made:

1. Boil the cauliflower in salted water until soft, about 8 minutes.

2. Pour off everything and mash coarsely with a fork. Let cool!

3. Mix eggs, feta cheese, cottage cheese, oatmeal and 50 grams of breadcrumbs together with the mashed cauliflower. Then add nutmeg, thyme, salt and pepper and mix well.

4. Now shape meatballs (size you want). Turn this over in the rest of the breadcrumbs.

5. Then put the oil in a saucepan, when it is well heated, put the shaped cauliflower steaks in it and fry until golden on each side.

6. Do not turn the steaks too early. Because then they could fall apart quickly.

7. The veggie steaks can be eaten hot or cold – for example with a green salad, mashed potatoes, baked vegetables, fruity tomato sauce, yoghurt dip or herb quark.

By the way: When buying the low-calorie cauliflower, make sure that the “flower” is white and that the binders are fresh green, advises the Provincial Association of Rheinischer Obst- und Gemüsebauer. The vegetables can be stored in the fridge for several days. Preferably, it is packed in a foil bag to reduce evaporation.
