In many Asian restaurants and snack bars, this is the right budget version for school children, trainees and students: fried eggplant with vegetables. Ingredients for eggnog with peas and snow peas
For four servings, you need 250 grams of rice, 100 grams of frozen peas, 75 grams of snow peas, 50 grams of bean sprouts, 4 eggs, 2 spring onions, 2 cloves of garlic, 3 tablespoons of soy sauce, a little ginger, pepper, sunflower oil (or other tasteless oil).

The recipe for delicious eggplant with peas
Here’s how it works: First, boil the rice in salted water according to the instructions on the package. You are also welcome to use leftover rice from the day before. But make sure the amount of rice listed in the recipe refers to uncooked rice. 250 grams of uncooked rice corresponds to about 750 grams of cooked rice.
Then prepare the vegetables: chop the garlic and ginger, cut the spring onion into diagonal rings and remove the threads from the snow peas. All you need to do is rinse the sprouts. Also put the frozen peas in a bowl to thaw.
Whisk the eggs in a bowl with soy and a little pepper. Then heat a splash of oil in a pan – or, if you have, in a wok.

There you first fry the snow peas and spring onion, after a few minutes you add garlic, ginger, frozen peas and soybean stalks.
After a few minutes, also add the rice to the pan and fry while stirring and stirring constantly. Then press everything to the edge of the pan and put the egg and soy mixture in the middle and let it boil for a few seconds until you start mixing everything.
