You do not need to throw anything away with THIS delicious creamy soup recipe!

Let’s be honest: in some dishes we have a hard time using whole broccoli or cauliflower. Especially with broccoli, it is the small coves that are excellent for dishes. Whether it is with delicious broccoli pakora or a delicious portion of pasta with broccoli and tomato. But what to do with the stem afterwards? The simplest solution, the cream soup! You can also apply this recipe 1: 1 on the cauliflower.

The ingredients for a broccoli soup

You will need: The stalk of one to two broccoli heads (or just a whole broccoli including the stalk), 1 potato, 1 onion, 2 cloves of garlic, 100 grams of melted cheese, 600 milliliters of vegetable stock, ½ teaspoon chili powder, ½ teaspoon turmeric, salt, pepper, olive oil and fresh parsley for garnish. You also need a mixer.

Broccoli stalk soup: the recipe

Here’s how: Cut the broccoli stalk left over from another dish into thin slices and remove the woody parts. Now chop the onion and garlic, peel the potatoes and cut them into small cubes.

Now first sweat the onion in a saucepan and after a few minutes add the broccoli stalk, garlic, diced potatoes and turmeric and sweat everything until it has a little color. Then glaze the broccoli with the vegetable broth and bring to the boil.

Then the mixer is used. Remove the casserole from the stove and now puree the soup until it has a creamy consistency. The starch in the potatoes should help with this. Then put the soup back on the stove and stir in the melted cheese on medium heat until it has dissolved and the soup is really creamy.

Now taste everything again with salt and pepper and garnish the broccoli stalk soup with fresh parsley. Have a nice meal!

But why use the stem at all? It’s very simple, because the stem is not only easy to eat, but also damn healthy. Because it sometimes even contains more of the vitamins and other nutrients than the bouquets that are mainly consumed.

On the other hand, the use of the stem is an important step towards food waste. As the Federal Ministry of Food and Agriculture writes on its website, most of the waste in German private households is still caused by fruit and vegetables. 35 percent of the food waste that can be avoided is fruit and vegetables. Scraping the stem can help here.

And in the end, you simply save money if you do not throw almost half of the broccoli and cauliflower in the trash!
