For 2 people you need 1 small head of broccoli (about 220 grams), a large onion, a clove of garlic, two medium-sized potatoes (about 80-100 grams), 25 grams of spinach leaves, 125 grams melted. cheese, 600 milliliters of vegetable broth, a little parsley, salt, pepper, turmeric and olive oil.

Here’s how it works: First you need to wash and chop the broccoli head. The florets do not have to be suitable, but for them to be able to be fried well. Just cut a few bouquets very small. Remove the woody end from the stem and cut the rest into thin slices.

The onion and garlic are chopped, the potatoes are peeled and cut into small cubes.

Now heat some olive oil in a saucepan and fry the small broccoli bushes. After two minutes, take them out and set them aside. Then the onion goes down into the pot together with the potatoes and the broccoli stalk. Everything sweats over high heat for two to three minutes.

Then add the remaining raw broccoli bouquets, spinach leaves and garlic and fry for a few more minutes. Here you can also season with salt, pepper and a little turmeric.

Now all you have to do is season the soup with salt and pepper (and maybe a splash of lemon and olive oil) and it is ready to be served.
